June: The fern continues growing, with mature fronds appearing.

Use of bracken in food is traditionally linked to Asian cultures and some parts of Europe. Requires knowledge and experience due to plant toxicity.
Perennial fern with large pinnate leaves. Grows in forests, open areas, and roadside edges.
Harvesting young shoots in spring before full unfurling. Selecting only fresh, undamaged shoots.
Best harvesting time is early spring when shoots are tender. Carefully clean shoots from hairs and skin.
Shoots must be boiled several times to remove toxins before use. It is recommended to use only the inner soft part of the shoot.
Boiled bracken shoots (Multiple boiling and cooking of shoots)
Requires thorough processing to remove toxins
1. Clean shoots from hairs and skin.
2. Boil in plenty of water 2-3 times, draining water after each boil.
3. Cook shoots until tender.
4. Serve with butter or sauce.
Fried bracken shoots (Pre-boiling followed by frying)
Toxins must be removed by boiling beforehand
1. Boil shoots twice, draining water.
2. Slice and fry with onions in oil.
3. Season with salt and pepper.
4. Serve hot.
Soup with bracken shoots (Using pre-boiled shoots in soup)
Requires careful thermal processing
1. Boil shoots 2-3 times, draining water.
2. Chop and add to vegetable or meat broth.
3. Cook until soup is ready.
4. Season to taste.
Braised bracken shoots (Pre-boiling followed by braising with vegetables)
Thorough thermal processing is important
1. Boil shoots twice, draining water.
2. Braise with carrots, onions, and spices until tender.
3. Serve hot as a side dish.
