August: The Yellow Hedgehog Mushroom continues to grow.

Edible, tasty mushroom. Valued for excellent taste and aroma. Commonly used in mushroom dishes in Europe.
Cap 3–10 cm, convex, bright yellow, with soft spines underneath. Stem short, firm, light-colored.
Grows in deciduous and coniferous forests, often in mossy areas Found from July to October
Harvest young and firm mushrooms. Pay attention to absence of damage and wormholes.
Clean with soft brush from forest debris. Can be washed as mushroom is dense and does not absorb much water. Used after boiling or frying.
Cap: Meaty, with spiny spines underneath, bright yellow
Stem: Short, firm, whitish or yellowish
Fried Yellow Hedgehog Mushroom (Frying)
Delicate taste with nutty notes
1. Clean and cut mushrooms into pieces.
2. Fry in butter until golden brown.
3. Season with salt and serve with herbs.
Yellow Hedgehog Mushroom Soup (Boiling)
