Safe when ripe. Used in traditional medicine to improve digestion and boost immunity. Berries consumed as a vitamin-rich food during winter.
Thorny shrub with oval serrated leaves. Berries bright red, sweet-tart taste.

Pick berries after full ripening — they become bright red. Berries are tart and good for processing.

Red Barberry Jam (Boiling)
Sweet and sour jam with rich aroma
1. Wash berries and optionally remove seeds.
2. Mix with sugar in equal parts and cook for 20 minutes.
3. Pour into sterilized jars and seal.
Red Barberry Jelly (Boiling)
Clear sweet and sour jelly
1. Press juice from berries.
2. Mix juice with sugar and gelatin, heat until dissolved.
3. Pour into molds and cool.
Red Barberry Drink (Infusion)
Refreshing sweet and sour drink
1. Pour berries with water and infuse for several hours.
2. Add sugar to taste, chill and serve.
Red Barberry Sauce (Boiling)
Sweet and sour sauce for meat and fish
1. Crush berries and cook with sugar and spices until thickened.
2. Cool and serve with dishes.
