Safe but watery. Prized northern plant, harvested for centuries. In Scandinavia served with local cheeses.
Low-growing herbaceous plant (10-25 cm). Leaves rounded wrinkled with serrated edge.
Grows in peat bogs and moist forests Berries ripen July-August, changing from red to amber-yellow
Pick only fully ripe berries (translucent yellow). Wear rubber boots due to marshy terrain.
Berries are very delicate - transport in shallow containers. Can freeze with sugar to preserve shape. Better used in compotes.

1. Sort berries, mix with sugar (1:1.5)
2. Let stand 6 hours to release juice
3. Cook single batch for 15 minutes on low heat

2. Sterilize 20 minutes at 80°C
3. Seal without adding water
